The biggest news for 2026 is the expanded availability of Defiant Santer, a single malt whiskey inspired by the mythical “Santer Cat” of Appalachian folklore. It offers a rugged, untamed profile with deep notes of smoke and mountain flora. For collectors, the 2025/2026 Defiant Patriot, a limited Veteran’s Day release continues its mission, with this year’s batch featuring a unique Cherry Wood finish that provides a tart, bright contrast to the smooth malt base. This rare, high-proof expression remains a coveted regional treasure, honoring local service members with every deep, fruit-forward sip poured. Proceeds benefit wounded veteran organizations.
Innovation isn’t limited to the still. This year, the distillery is promoting the ”Golden Valley Cold Brew”a mix of 2 oz Defiant Whisky, 4 oz local cold brew coffee, and a splash of maple syrup, shaken and served over a single large cube. This highlights the whiskey’s natural vanilla and honey notes without the need for heavy cream.
Tours at the Bostic facility remain a “must-do.” For $20 (a slight update from previous years), guests get a 30-minute deep dive into their four-ingredient philosophy (yeast, barley, oak, and water from their on-site aquifer).
